Vegan Chocolate Cake

Ingredients (6-8 persons):

  • 150 grams of grounded almonds
  • 150 grams of unsweetened dates
  • 120 ml coconut cream
  • 9-10 tablespoons raw cocoa powder
  • 1/4 teaspoon natural vanilla extract
  • 1/8 teaspoon Himalayan salt
  • 60 ml melted extra virgin coconut oil + 1 tablespoon
  • 1 cup raw walnuts (chopped in small peaces)
  • 1 cup goji berries
  • food processor
  • cake tin


  • cut the dates into small pieces
  • let the coconut oil melt in a small pan on low heat
  • start with the first layer of the cake by mixing the grounded almonds with 60 grams of the chopped
  • dates (preferably use a food processor)
  • add some water until the mixture looks like dough
  • for the filling, mix the rest of the chopped dates with the melted coconut oil, coconut cream, raw cocoa power, vanilla extract and Himalayan salt
  • put some coconut oil on the inside of the cake tin
  • put the almond dough in it first and cover it up with the filling
  • sprinkle the filling with the walnuts and goji berries and pit the cake in the fridge for at least 6 hours

Healthy food alternatives:

  • use dried figs or raisins instead of dates
  • use hazelnuts instead of walnuts
  • use mulberries instead of goji berries
