Summer Salad with Red Cabbage

Ingredients (4-6 persons):

  • 1/2 red cabbage
  • 1 red pepper
  • 1 carrot (or 2 small carrots)
  • 1 shallot
  • 2 tablespoons of extra virgin olive oil
  • 2 tablespoons of fresh lemon juice
  • 1-2 tablespoons of yellow raisins
  • 1 teaspoon of organic honey (optional)
  • Himalayan salt
  • freshly grounded black pepper

Directions:

  • remove the outer leaves of the red cabbage
  • cut the red cabbage in half, remove the hard parts out of it. (use the other half of the red cabbage for one of our other delicious healthy recipes, e.g. Sauteed Red Cabbage with Coconut Oil and Pear)
  • dice the red cabbage into thin slices
  • put the slices of red cabbage in a bowl and give them a splash of boiling water in order to make them a bit softer
  • let it sit for 3 minutes, then rinse the cabbage in a strainer
  • peel and dice the shallot
  • wash the carrot and red pepper and dices them into small cubes
  • make a dressing with extra virgin olive oil, lemon juice, salt, pepper and, if you like sweet, some organic honey
  • mix the cabbage with the carrot, red pepper and the dressing, cove the bowl with cling film and put the bowl in the refrigerator for at least 1 hour
  • before serving the salad, sprinkle it with the yellow raisins

Healthy food alternatives:

  • use white cabbage instead of red cabbage
  • use (red) onion instead of shallots
  • use yellow pepper instead of red pepper
  • use limejuice, white wine vinegar or apple vinegar instead of lemon juice
  • add some thin sliced red chili for a spicier version
