Homemade Truffles with Toasted Coconut Flakes

Ingredients (4 persons):

  • 200 grams of cream cheese
  • 1 cup of raw white almonds
  • 2 cups of raw white hazelnuts
  • 3 dried apricots
  • 4 unsweetened dried dates
  • 4 tablespoons of toasted coconut flakes (preferably home-made toasted coconut flakes*)
    Himalayan salt


  • chop the apricots and dates into small pieces
  • chop the almonds and hazelnuts into small pieces
  • mix half of the cream cheese with the chopped almonds and dates and a pinch of salt
  • make small balls of this mixture and cover them with coconut flakes
  • mix the other half of the cream cheese with 1 cup of chopped hazelnuts, the chopped apricots and a pinch of salt
  • make small balls of this mixture and cover them with the rest of the chopped hazelnuts

Healthy food alternatives:

  • use Brazil nuts instead of almonds
  • use cashew nuts instead of hazelnuts
  • use dried plums, mulberries of goji berries instead of apricots
  • use dried figs or raisins instead of dates
  • use raw cocoa powder instead of coconut flakes
  • use hemp seed or sesame seeds instead of hazelnuts
  • add some orange, lemon or lime zest for a fresh taste

* homemade toasted coconut flakes are very easy to make. You can toast raw coconut flakes in a shallow pan on medium heat. You don’t need oil. Keep on stirring until the coconut flakes become crispy and get a light golden color.
